Ingredients
- 12 ounces of your favorite brand of canned tuna, drained and broken into large chunks with a fork
- 2 pints cherry tomatoes, rinsed and sliced in half
- 2 cloves garlic, peeled and minced
- 1 teaspoon capers (optional)
- 2 bay leaves
- 1/2 cup extra virgin olive oil
- Salt
Directions
1.
In a
large
sauce
pan
over
medium
heat,
add
the
olive
oil
and
garlic,
along
with
1/4
cup
of
water.
Simmer
and
sauté
the
garlic
until
it
becomes
fragrant
and
begins
to
soften.

Add
the
sliced
cherry
tomatoes
along
with
the
tuna,
capers,
bay
leaves
and
1/4
cup
water
to
the
pan
and
stir
all
ingredients
together
well.
Cover
the
pan
and
simmer
the
sauce
over
medium
to
low
heat
for
10 -
12
minutes
or
just
until
the
tomatoes
begin
to
break
down.
3.
After
simmering,
taste
the
sauce
and
add
salt
to
your
taste.
4.
Simmer
the
sauce,
uncovered,
for
another
3 -
5
minutes
and
then
remove
it
from
the
heat,
discard
the
bay
leaves
and
serve
the
sauce
over
your
favorite
pasta
or
rice.
