Ingredients

- 6 - 8 medium plum tomatoes, diced

- 4 cloves garlic, peeled and minced

- 2 stems fresh oregano

- 1/4 cup olive oil

- 1/4 cup white wine or water

- Salt

Directions

1.  Add olive oil and garlic to a sauce pan over medium high heat. Sauté garlic for 1 minute.

2.  Add the diced tomatoes, wine and oregano to the pan. Stir to combine all ingredients. Lower the heat to medium low, and then cover the pan and simmer the sauce for 10 - 15 minutes or until the tomatoes cook down.

 

 

 

3.  After the tomatoes have cooked down and released their liquid, using a fork or potato masher, mash the tomatoes thoroughly to make a smoother sauce. If the sauce is too thick at this point, add water to thin it to your liking and add salt to your taste.

4.  Cook the sauce another 5 minutes and then it is ready for use as a dipping sauce, pizza sauce or in your favorite pasta recipe.
