Ingredients
- 2 cups cooked farro
- 1 pint cherry tomatoes
- 2 cups packed arugula
- 4 ounces feta cheese, crumbled
- 1 - 2 tablespoons cider vinegar
- 4 tablespoons extra virgin olive oil
- Salt
Directions
1.
Rinse
and
quarter
the
cherry
tomatoes;
add
them
to a
large
salad
bowl
along
with
the
farro,
arugula
and
feta
cheese.
2.
Add
the
vinegar
and
olive
oil
to
the
bowl
as
well
as a
pinch
of
salt.
Toss
all
ingredients
well
to
combine.
3.
Taste
the
salad
and
add
more
salt,
vinegar
and/or
olive
oil
to
suit
your
taste.
4.
Serve
chilled
or
at
room
temperature.
Notes
You
can
make
this
salad
the
night
before
and
refrigerate
it
overnight
allowing
the
flavors
to
blend
together
more.
Toss
well
just
before
serving
as
the
liquids
will
settle
at
the
bottom
of
the
bowl
overnight.
