Ingredients

- 1/2 recipe of our Quick and Easy Pizza Dough

- 1/2 recipe of our Marinara Sauce

- 2 medium zucchini

- 1 pound medium shrimp, peeled, cleaned and deveined

- 1/2 medium red bell pepper

- 1/2 medium green bell pepper

- 2 cloves fresh garlic

- 1/3 cup gaeta olives

- 1/4 cup extra virgin olive oil

- 1/4 cup white wine

- 1/2 ball fresh mozzarella

- Salt

Directions

1.  Preheat oven to 500 degrees. If using a pizza stone for baking, preheat your stone on the bottom rack of your oven for at least 1 hour prior to baking the pizza.

2.  Rinse the shrimp; look over them thoroughly to make sure they are clean and all shells, tails and veins have been removed.

3.  Clean the zucchini and slice them into thin rounds.

 

 

 

4.  Clean and seed the bell peppers. Slice them into thin strips.

5.  Clean and peel the garlic. Chop it finely.

6.  Place the garlic and olive oil in a skillet over medium heat. Sauté the garlic until it begins to sizzle.

7.  Add the white wine to the pan and simmer for 2 minutes.

8.  Place the peppers and zucchini in the pan with a pinch of salt. Cover and cook for 8 - 10 minutes or until the zucchini soften slightly. If the liquid in the pan evaporates too quickly, add water as needed.

9.  Remove the pan from the heat and set aside.

10.  Dice or shred the mozzarella into small pieces and set aside.

11.  Roll out and shape the pizza dough to your desired shape and thickness - the thinner the dough, the crispier the pizza crust. If using a pizza peel, place semolina flour or a bit of cornmeal on your peel and then place the pizza dough on the peel. If baking the pizza in a pan, make sure the pan is non-stick. Otherwise, line your pan with parchment paper to prevent the pizza sticking to the pan.

12.  Ladle several spoonfuls of tomato sauce evenly over the dough, and then distribute the mozzarella over the sauce. Add the zucchini and pepper mix over the cheese and top with the raw shrimp and gaeta olives.

13.  Place the pizza onto the baking stone or on the bottom rack of the oven and cook for 15 - 20 minutes or until the crust is a deep golden brown, the sauce is bubbly, and the shrimp have cooked through.

14.  When the pizza has finished baking, remove it from the oven and let cool for 5 - 10 minutes.

15.  Slice and serve hot.

Notes

For additional flavor, just before serving the pizza, drizzle a little bit of high quality extra virgin olive oil over the top.
