Ingredients
- 4 sandwich rolls (rustic bread like our Simple Focaccia in the picture or our Ciabatta)
- 2 cups arugula, rinsed and dried
- 1 large beefsteak tomato
- 16 ounces fresh mozzarella cheese
- 4 basil leaves
- Extra virgin olive oil
- Salt and pepper
Directions
1.
If
they
are
not
presliced,
slice
each
of
the
sandwich
rolls.
Toast
the
rolls
in
the
oven
or
individually
in
the
toaster
until
they
are
a
light
golden
brown.

Core
and
slice
the
tomato
into
at
least
4
slices.
3.
Slice
the
mozzarella
into
8
slices.
4.
To
assemble
the
sandwiches,
place
1/2
cup
of
arugula
on
each
of
the
bottom
parts
of
the
sandwich,
and
then
layer
a
slice
of
tomato
over
the
arugula.
Add
2
slices
of
mozzarella
onto
the
tomato
along
with
1 of
the
basil
leaves.
Drizzle
a
small
amount
of
olive
oil
over
the
mozzarella
and
basil
and
top
with
a
pinch
of
salt
and
pepper.
Close
the
sandwich
with
the
top
part
of
the
bread
and
serve
immediately.
