- 2 cups rice

- 1 package frozen mixed vegetables

- 1/3 cup green olives, sliced

- 1/3 cup black olives, sliced

- 2 tablespoons capers, drained and rinsed

- 1 red bell pepper, diced

- 2 tablespoons cider vinegar

- 1/3 cup extra virgin olive oil

- Salt


1.  Cook the rice according to manufacturer's instructions.

2.  In a separate skillet, cook the mixed vegetables according to manufacturer's instructions.

3.  When the rice and mixed vegetables have finished cooking, in a large mixing bowl, combine the rice, mixed vegetables and all other ingredients and mix well. Add salt to the mixture as necessary.




4.  Cover the bowl and refrigerate overnight.

5.  Remove the salad from the refrigerator 30 minutes to 1 hour prior to serving. Toss the salad to combine all ingredients one more time just before serving.
