Ingredients
- 1 pound linguine
- 1/2 pound salmon fillet, skin and bones removed
- 1 large can tomato puree (28 ounces)
- 3 fresh cloves garlic
- 1/4 cup olive oil
- 1/2 cup white wine
- 1 tablespoon parsley, minced
- Salt
Directions
1.
Prepare
the
water
for
the
pasta
according
to
the
manufacturer's
instructions.
2.
Roughly
chop
the
garlic
and
put
it
in a
skillet
over
medium
heat
with
the
olive
oil.
Sauté
until
the
garlic
begins
to
sizzle.

Add
the
white
wine
to
the
skillet
and
simmer
for
2
minutes.
4.
Add
the
tomato
puree
and
1/2
a
can
of
fresh
water
to
the
skillet.
Add
a
small
amount
of
salt
to
taste.
Cover
the
pan,
raise
the
heat
to
medium-high
and
bring
the
sauce
to a
boil,
about
6 -
8
minutes.

Once
the
sauce
begins
to
boil,
lower
the
heat
back
to
medium
and
add
the
salmon.
Cover
and
let
the
salmon
cook
for
10 -
12
minutes.
6.
Cook
the
linguine
until
it
reaches
al
dente
according
to
the
manufacturer's
instructions.
7.
Uncover
the
pan,
break
up
the
salmon
into
chunks
and
add
the
parsley.
Stir
the
sauce
to
mix
well;
taste
it
and
add
salt
as
needed.
Continue
simmering
the
sauce,
uncovered,
so
that
it
reduces
and
thickens.
8.
Drain
the
pasta
well
and
add
it
to
the
pan
with
the
sauce.
Turn
off
the
heat
and
mix
the
pasta
and
sauce
thoroughly.
9.
Plate
the
pasta
and
serve.
