Ingredients
- 2 chicken breast fillets (1 whole breast cut in half)
- Peel of 1/4 lemon
- 1 bay leaf
- 4 cloves fresh garlic, peeled
- 3 large leaves fresh basil
- 4 stalks parsley
- 1 small stalk celery
- 1/2 small carrot
- 1 slice of onion
- 1/4 cup white wine
- 2 tablespoons extra virgin olive oil + more for drizzling
- 1 cucumber
- 3 tomatoes
- Assorted olives (optional)
- Salt
Directions
1.
Fill
a
large
pot
with
fresh
water
and
add
to
it
the
chicken
breasts,
lemon
peel,
bay
leaf,
garlic,
basil,
parsley,
celery,
carrot,
onion,
white
wine
and
the
2
tablespoons
of olive
oil.

Over
high
heat,
bring
the
pot
to a
boil.
Once
the
water
begins
to
boil,
turn
the
heat
to
low,
cover
the
pot
and
poach
the
chicken
breasts
until
they
are
thoroughly
cooked
through,
approximately
25
minutes.
3.
While
the
chicken
is
poaching,
thinly
slice
the
tomatoes
and
cucumber.
4.
When
the
chicken
has
finished
cooking,
remove
the
breasts
from
the
water
and
put
them
on a
plate
or
cutting
board
to
cool
well.
5.
Once
the
chicken
breasts
have
cooled,
using
a
sharp
knife,
cut
them
in
thin
slices
and
plate
them
with
the
tomato
and
cucumber.
6.
Season
the
salad
with
our
Herb
Oil
and
serve
with
assorted
olives.
