Ingredients

- 1 recipe of our Simple Homemade Italian Sausage without the casings or 1 1/2 pounds of your favorite sausage brand

- 1/2 pound ground sirloin

- 4 cloves garlic, minced

- 1 tablespoon parsley, minced

- 1/8 teaspoon nutmeg

- 2 large eggs

- 1/3 cup bread crumbs

- 1/2 cup Parmigiano Reggiano cheese, grated

- 2 teaspoons milk

- 2 teaspoons extra virgin olive oil

- Salt and pepper

Directions

1.  Preheat the oven to 400 degrees, and line 2 baking pans with foil or parchment paper.

2.  In a mixing bowl, add the eggs, nutmeg, milk, olive oil, parsley, and a pinch of salt and pepper. Whisk the ingredients together thoroughly until you have a uniform liquid.

3.  To that mixture, add the meats, bread crumbs, Parmigiano and garlic.

 

 

 

4.  Using your hands or a heavy spatula, mix all of the ingredients together well so that they are evenly distributed throughout the mixture. As the mix comes together, it should be easily pliable and not very sticky. If the mix seems too wet, add a few more bread crumbs and Parmigiano.

5.  To form the meatballs, take about 2 tablespoons of the mixture into your hand and roll it into a ball. Place the finished meatball on the lined baking pan. Continue this process until all of the meat mix has been formed into balls.

6.  Place the trays with the meatballs on the middle racks of the oven and bake for 20 minutes. After 20 minutes, turn the meatballs and rotate the trays and bake for another 12 - 15 minutes or until the meatballs are golden and cooked through.

7.  When the meatballs are finished, remove them from the oven and serve hot or at room temperature.
