Ingredients
- 2 pounds medium shrimp, peeled, deveined and rinsed
- 1/4 cup extra virgin olive oil
- 2 cloves garlic, peeled and minced
- 1/3 cup white wine
- Zest of 1/4 lemon
- 2 tablespoons butter
- 2 tablespoons minced parsley
- Salt and pepper
Directions
1.
In a
large
sauté
pan
over
medium
high
heat,
add
the
olive
oil,
butter,
lemon
zest,
white
wine
and
garlic
to
the
pan.
Bring
the
ingredients
to a
simmer
and
allow
the
wine
to
evaporate
by
half.

Add
the
shrimp
to
the
pan
and
stir
all
ingredients
well
to
combine.
Cover
the
pan
and
lower
the
heat
to
medium.
Simmer
the
shrimp
for
7 -
10
minutes
or
until
the
shrimp
are
firm
and
white.
3.
Uncover
the
pan,
add
the
parsley
and
continue
to
simmer
the
mixture
until
the
sauce
is
reduced
by
half.
At
this
point,
taste
the
sauce
and
add
salt
and
pepper
to
your
taste.
4.
Remove
the
pan
from
the
heat
and
serve
the
shrimp
hot.
Notes
-
The
tails
of
the
shrimp
can
be
left
on
or
removed.
It
is
your
preference.
-
This
recipe
can
also
be
served
over
your
favorite
pasta,
rice
or
polenta.
