- 10 egg whites

- 1/2 shallot

- 1/4 medium onion

- 4 green onions

- 2 tablespoons extra virgin olive oil

- Grated Parmigiano Reggiano or Pecorino Romano cheese (optional)

- Salt


1.  Peel, clean and dice the shallot, onion and green onions and place them in a pan with the olive oil and a pinch of salt. Sauté the onions over medium heat for 3 - 5 minutes until they have softened slightly.




2.  Add the egg whites to the pan and let them cook for 5 - 8 minutes or until they begin cooking through.

3.  When the egg whites are halfway cooked, begin scrambling them by stirring the ingredients in the pan thoroughly. Continue cooking until the egg whites are completely cooked and are beginning to brown.

4.  Turn off the heat and sprinkle the cheese over top to your taste. Plate and serve.
