An authentic Italian recipe from our kitchen to yours. Buon Appetito!

Ingredients

- 6 large eggs

- 4 ounces ricotta cheese

- 1/2 cup Parmigiano Reggiano or Pecorino Romano cheese, grated

- 1 recipe of our Simple Homemade Italian Sausage (without casings) or 1 pound of your favorite Italian sausage, casings removed and discarded

- 1/3 cup extra virgin olive oil

- Salt and pepper

Directions

1.  Preheat oven to 400 degrees.

2.  Break the eggs into a large mixing bowl and add the ricotta, 1/4 cup of the grated cheese and a pinch of salt and pepper. Whisk the ingredients together until they are well combined.

3.  In a large, nonstick skillet over medium heat, add the olive oil and the sausage. Using the back of a fork, break the sausage into small pieces. Once the sausage is broken up, saute it until it begins to brown.

 

 

 

4.  Once it has browned, remove the pan from the heat and pour the sausage into the egg mixture. Stir the mix well to distribute the sausage throughout.

5.  Line an oven safe baking dish with parchment paper or spray with cooking spray to prevent the frittata from sticking. You can also use your skillet if it is oven safe.

6.  Pour the frittata mixture into the baking dish or skillet and place it on the center rack of the oven and bake for 20 - 25 minutes or until the top begins to brown and the eggs are cooked through.

7.  When the frittata just begins to brown, remove the dish from the oven and sprinkle the remaining grated cheese over the top. Then return it to the oven and let the cheese melt and turn a golden brown - about 8 - 10 minutes.

8.  Once the cheese has browned, remove the frittata from the oven and let it cool for 10 - 15 minutes prior to serving.
