Ingredients
- 6 large eggs
- 2/3 cup sugar
- 1 1/2 teaspoons vanilla
- 1 teaspoon grated lemon or orange zest
- 1 1/3 cup cake flour
Directions
1.
Preheat
the
oven
to
350
degrees.
Line
an
8-inch
cake
pan
with
parchment
paper
or
grease
with
butter
or
nonstick
spray.

In a
mixing
bowl,
add
the
eggs,
sugar,
vanilla
and
zest.
Using
an
electric
mixer,
beat
well
until
very
foamy.
3.
Gently
fold
in
one
third
of
the
flour
into
the
liquid
mix.
Fold
until
all
of
the
flour
is
combined
into
the
liquid
and
then
repeat
this
step
until
all
of
the
flour
has
been
added
and
combined
thoroughly.
4.
Pour
the
batter
into
the
cake
pan.
Place
the
pan
on
the
middle
rack
of
the
oven
and
bake
for
about
30
minutes
or
until
golden.
5.
Cool
for
1
hour
prior
to
icing
or
serving.
