Ingredients

- 4 large golden delicious apples

- 1 cup flour

- 1/3 cup sugar

- 1 teaspoon baking powder

- 1/4 teaspoon salt

- 1/2 cup milk

- 1/2 teaspoon vanilla

- 3 large eggs

- Zest of 1/2 lemon

- Juice of 1 lemon

- 3 tablespoons apricot jam

- 2 tablespoons water

Directions

1.  Preheat oven to 350 degrees. Line the bottom of the cake pan with parchment paper to prevent sticking.

2.  Clean, peel and core the apples. Slice all of the apples into thin slices and place them in a mixing bowl. Toss the apples with the juice of 1 lemon and set aside.

3.  In a separate mixing bowl add the flour, sugar, baking powder, salt and mix well. Then add the milk, vanilla, eggs and lemon zest. Whisk all ingredients thoroughly to form a batter.

 

 

 

4.  Remove about 1/3 of the sliced apples from the mixing bowl and set aside. To the other 2/3 of the sliced apples, add the batter. Mix the apples and the batter thoroughly and then place the mixture into the cake pan.

5.  Arrange the sliced apples that were set aside on top of the batter covered apples.

6.  Place the cake pan in the oven on the middle rack and bake for 1 hour.

7.  When the cake has finished baking, remove it from the oven and let it cool for at least 1 hour prior to serving.

8.  Just before serving, in a small bowl, whisk the apricot jam and the water together. Spread a thin, even layer of the mixture over the top of the cooled cake.

9.  Plate and serve the cake at room temperature.

Notes

- This cake is more of a custard cake; it does not have a loose crumb.

- You can substitute granny smith or any other good baking apple for the golden delicious apples in this recipe.
