An authentic Italian recipe from our kitchen to yours. Buon Appetito!

Ingredients

- 1 recipe Simple Homemade Italian Sausage or 2 pounds of your favorite sausage, without the casings

- 1 28 ounce can pureed tomatoes

- 4 medium cloves garlic, peeled and minced

- 1 medium onion, peeled and minced

- 4 medium tomatoes, diced

- 1/3 cup extra virgin olive oil

- 1 bay leaf

- 1/4 cup packed basil leaves, chopped

- 2/3 cup water

- 1/3 cup white wine

- 1/4 cup grated Parmigiano Reggiano cheese

- Salt

* If you would like a spicy sauce, add cayenne pepper or red chili flakes to suit your own taste.

Directions

1.  In a sauce pan add olive oil, garlic and onion and cook over medium heat for approximately 2 minutes or just until the garlic begins to sizzle. Add the sausage to the pan. Using a fork, mash the ground meat into small pieces and sauté until the meat is browned (about 10 - 12 minutes).

2.  Once the meat has browned, add the diced tomatoes and the white wine to the pan. Sauté the mixture until the tomatoes begin to break down and the wine has almost evaporated.

3.  Add the pureed tomatoes, bay leaf, basil, Parmigiano Reggiano and water to the pan. Stir well, cover and let simmer for 15 - 20 minutes.

 

 

 

4.  Uncover and taste sauce. Add salt and pepper to taste. Simmer approximately 8 - 10 more minutes, uncovered, or until the sauce has reduced by 1/3 to 1/2.

5.  Remove the pan from the heat and serve over your favorite pasta or our Polenta sulla Spianatoia recipe.

Notes

Reducing the sauce by 1/3 will give you a thinner, lighter sauce. Reducing the sauce by 1/2 will give you a thicker sauce.
