Ingredients

- 1 recipe of our Quick and Easy Pizza Dough or your favorite pre-mixed pizza dough

- 6 ounces fresh ricotta cheese, drained

- 8 ounces fresh mozzarella cheese, grated or cut into small pieces

- 1/3 cup fontina cheese, grated

- 1/4 cup provolone cheese, grated

- 1/4 cup asiago cheese, grated

- 1/4 cup Parmigiano Reggiano cheese, grated

- 2 tablespoons Pecorino Romano cheese, grated

- 2 tablespoons sweet Gorgonzola cheese, crumbled

- 1/2 medium onion, cut into thin slices

- 1 sprig rosemary, minced

- 1/8 teaspoon nutmeg (optional)

- Salt and pepper

Directions

1.  Preheat the oven to 400 degrees.

2.  Prepare a springform pan by either spraying it with nonstick cooking spray or lining it with parchment paper.

3.  Roll the pizza dough on a floured work surface. Roll the dough out large enough to cover the interior bottom and sides of the pan. It should be about 1/8 inch thick.

 

 

 

4.  Place the dough into the pan and fit it snuggly into the bottom of the pan and up the sides. Leave any overhanging dough for the moment.

5.  In a mixing bowl, combine all of the cheeses as well as the nutmeg and a pinch of salt and pepper. Fold all of the ingredients to combine them well.

6.  Spoon the cheese mixture into the pan and distribute it evenly over the dough.

7.  Distribute the onion slices and minced rosemary over the top of the cheese mixture.

8.  Fold the overhanging dough back over into the pan to form a crust around the edge of the pie. If there is too much dough remaining, cut off the excess dough and discard as necessary.

9.  Place the pie into the oven on the center rack and bake for 45 - 55 minutes or until the crust is a deep golden brown, the cheese has browned and the onions have begun to caramelize.

10.  Once the pie is finished baking, remove it from the oven and allow it to cool for at least 10 minutes prior to serving.
