Ingredients

- 4 cups all purpose flour

- 1 1/4 cup sugar

- 1 1/2 teaspoons baking powder

- 3/4 teaspoon baking soda

- 1/2 cup neutral cooking oil

- 2/3 cup milk

- Zest of one lemon

- 1 tablespoon anise liquor

- 2 large eggs + 2 large eggs for wash

- 1/8 teaspoon salt

- 6 - 8 hard boiled eggs

- Nonpareils or sparkling sugar

Directions

1.  Preheat oven to 400 degrees. Move the baking rack(s) to the center of the oven.

2.  In a mixing bowl, add the flour, baking soda, baking powder and salt.

3.  In a separate mixing bowl, whisk together the sugar, oil, eggs and milk. When the mixture is combined well, whisk in the liquor and lemon zest.

 

 

 

4.  Add the wet mixture to the bowl with the dry ingredients and mix thoroughly until a shaggy dough begins to form. Once the dough begins to form, turn it out onto a floured work surface.

5.  Continue kneading the dough to combine all ingredients well until you have a malleable dough roughly the consistency of Play Doh. If the dough remains too wet, add flour until you reach the desired consistency.

6.  At this point, divide the dough into 6 to 8 equal pieces and shape them into any form desired. The dough can also be rolled out in a large sheet about 1/8 inch thick and large cookie cutters can be used to make the shapes.

7.  Place the shaped dough onto cookie sheets lined with parchment paper.

8.  Place one hard-boiled egg in the center of each of the cookies. Secure the egg with strips of left over dough.

9.  For the egg wash, whisk the 2 eggs and 1 tablespoon of water together until thoroughly combined. Lightly brush the tops of the cookies with the wash. Sprinkle the nonpareils or sparkling sugar over egg washed cookies.

10.  Place the cookies in the oven and bake for 18 - 20 minutes. If baking 2 trays at once, rotate the trays half way through baking. The cookies are baked when they are golden brown.

11.  Remove the trays from the oven and let cool at least 30 minutes prior to serving.
