Ingredients

- 1 stick butter, softened to room temperature

- 1 cup sugar

- 1/2 cup brown sugar

- 3 eggs

- 2 teaspoons vanilla

- Zest of 1 medium orange

- Zest of 1 small lemon

- 3 cups flour

- 2/3 cup Dutch processed cocoa powder

- 2 teaspoons baking powder

- 1/2 teaspoon salt

- 1 teaspoon ground cinnamon

- 1 teaspoon allspice

- 1/2 teaspoon ground cloves

- 1/2 teaspoon ground nutmeg

- 1/2 cup total of any or all of the following: shelled and chopped, raw, unsalted walnuts, almonds, hazelnuts, and/or pistachios

- 1/2 cup chocolate chips

- 1/2 cup raisins

Directions

1.  Preheat the oven to 350 degrees. Place the oven racks on the center rungs of the oven. Line 2 cookie sheets with parchment paper and set aside.

2.  In one mixing bowl, add the flour, cocoa powder, baking powder, salt, cinnamon, allspice, cloves and nutmeg. Mix the ingredients together well using a whisk or a fork until you have a uniform mixture.

3.  In another mixing bowl or the bowl of a stand mixer, add the softened butter and both types of sugar. Using an electric mixer, cream the butter and sugar until it is light and fluffy.

 

 

 

4.  Lower the speed of the mixer and add the eggs, one at a time, until they are well combined. Then add the vanilla and the orange and lemon zests.

5.  Continue mixing and add the mixture of dry ingredients to the sugar, egg and butter mixture. Keep mixing until the dough begins to come together and pull away from the sides of the bowl.

6.  At this point, turn off the electric mixer and add in the nuts, chocolate chips and raisins. Fold these ingredients into the dough until they are evenly distributed throughout the dough.

7.  Using a small cookie scoop or a tablespoon, measure out a generous tablespoon of the cookie dough into your hand. Roll the dough into a ball like you would a meatball, and then place the ball of dough on the lined cookie sheet.

8.  Continue step 7 until you have no more space on your cookie sheets or you have used all of your dough.

9.  When the cookie sheets are ready, place them in the oven and bake for 12 - 15 minutes, rotating the sheets half way through the cooking time.

10.  When the cookies have finished baking, remove the sheets from the oven and place the finished cookies on a sheet of parchment or a rack to cool.

11.  Repeat steps 7 - 10 until all of the cookies have been baked.

12.  Let the cookies cool at least 15 minutes before serving.

13.  Store the cookies in an airtight container.
